  • 23 boneless, skinless chicken breasts (or thighs)
  • 4 cups low-sodium chicken broth
  • 1 small yellow onion, finely chopped
  • 34 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1 (14.5 oz) can crushed tomatoes
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Fresh parsley (for garnish)
  • Salt and pepper to taste

Instructions

  1. Place raw chicken in the bottom of the crock pot.
  2. Add chopped onions, minced garlic, Italian seasoning, red pepper flakes (if using), and crushed tomatoes.
  3. Pour in the low-sodium chicken broth.
  4. Cover and cook on low for 6–7 hours or high for 3–4 hours.
  5. Shred the chicken once cooked and return it to the pot.
  6. Stir in heavy cream until well combined.
  7. For a thicker consistency, mix cornstarch with cold water and stir into the soup.
  8. Gradually add Parmesan cheese while stirring until melted.
  9. Cook uncovered on low for an additional 20–30 minutes.
  10. Season with salt and pepper; garnish with fresh parsley before serving.
