  • 2 large chicken breasts, boneless and skinless
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 tablespoon dried dill
  • 2 large eggs
  • 1/4 cup milk
  • 1 cup panko breadcrumbs
  • Vegetable oil, for frying
  • 4 brioche buns
  • 1/2 cup mayonnaise
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon lemon juice
  • 1 cup shredded lettuce
  • 8 slices of dill pickle

Instructions

  1. Slice each chicken breast in half horizontally and pound to an even thickness of about half an inch.
  2. Set up a breading station: Combine flour, salt, black pepper, garlic powder, onion powder, and dried dill in one dish; whisk eggs and milk in another; and place panko breadcrumbs in a third dish.
  3. Coat each piece of chicken in flour, then dip into the egg mixture, and finally roll in panko breadcrumbs.
  4. Heat vegetable oil over medium-high heat in a large skillet and fry the chicken pieces for about 4–5 minutes per side until golden brown.
  5. In a small bowl, mix mayonnaise with fresh dill and lemon juice to create the dill mayo.
  6. Toast the brioche buns lightly, then spread dill mayo on each side.
  7. Assemble the sandwiches by layering lettuce, crispy chicken, and pickle slices on the buns.
