  • 1 pound cauliflower florets
  • 1 pound extra lean ground beef
  • 1 1/2 tablespoons olive oil, divided
  • 1/4 cup tomato paste
  • 2 tablespoons honey
  • 2 tablespoons chili crunch
  • 2 tablespoons soy sauce or coconut aminos
  • 2 tablespoons black vinegar or rice vinegar
  • 1/3 cup water
  • 4 scallions, thinly sliced (greens and whites separated)

Instructions

  1. In a bowl, mix tomato paste, honey, chili crunch, soy sauce, black vinegar, water, and sliced scallion whites to prepare the sauce.
  2. Heat olive oil in a skillet over medium-high heat and roast the cauliflower for about 4–5 minutes until browned. Transfer to a bowl.
  3. In the same skillet, add more olive oil and brown the ground beef for 3–4 minutes, breaking larger pieces apart.
  4. Pour the prepared sauce over the beef and cook for an additional 1–2 minutes until slightly thickened. Add back roasted cauliflower and mix well.
  5. Garnish with scallion greens before serving.
