5 chicken cutlets
½ cup mayonnaise
3 tbsp Greek yogurt
2 tbsp lemon juice
2 romaine hearts (chopped)
2 French baguettes
⅓ cup all-purpose flour
½ tsp salt
¾ tsp smoked paprika
2 eggs
¾ cup panko crumbs
¼ cup breadcrumbs
1 tsp dried parsley
½ tsp ground black pepper
½ tsp sea salt
½ tsp dried oregano
1 tsp garlic powder
¼ cup Parmesan cheese (freshly grated)
Instructions
In a bowl, mix mayonnaise, Greek yogurt, Dijon mustard, Worcestershire sauce, lemon juice, minced garlic, black pepper, and sea salt to create the dressing. Reserve some dressing for the salad.
Season chicken cutlets with sea salt and black pepper. Set up a breading station with flour mixed with salt and smoked paprika in one bowl, whisked eggs in another, and combined panko crumbs with seasonings in the last.
Dredge each cutlet first in flour, then dip in eggs, and coat thoroughly with breadcrumbs.
Heat oil in a pan over medium heat and fry each cutlet until golden brown on both sides (about 4-5 minutes). Drain on a wire rack.
Slice baguettes lengthwise, spread reserved dressing inside, add crispy chicken cutlet followed by chopped romaine lettuce. Close sandwiches and enjoy!
