  • 1 cup heavy cream (or whole milk/half-and-half)
  • 1/2 cup Parmesan cheese (optional)
  • 1 teaspoon fresh thyme
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a medium-sized baking dish.
  2. Thinly slice the Yukon gold potatoes using a mandolin or sharp knife.
  3. In a large pot over medium heat, melt the butter and sauté minced garlic until fragrant.
  4. Stir in flour to create a roux, then gradually add cream, stirring until thickened.
  5. Mix in Parmesan cheese (if using), thyme, salt, and pepper until smooth.
  6. Pour the sauce over the sliced potatoes in a large bowl; gently toss to coat.
  7. Arrange potato slices upright in the baking dish and pour remaining sauce on top.
