  • 2 Salmon Fillets
  • 12 oz Pappardelle Pasta (or any pasta of choice)
  • 2 tbsp Unsalted Butter
  • 2 Garlic Cloves, minced
  • 1 cup Heavy Cream
  • ½ cup Dry White Grape Juice
  • Zest of 1 Lemon
  • 5 oz Baby Spinach Leaves
  • 2 tbsp Capers
  • Salt and Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200ºC). Season salmon fillets with salt and pepper, placing them on a baking dish. Bake for about 12 minutes until cooked through.
  2. Meanwhile, boil water in a pot and cook pappardelle pasta according to package instructions until al dente.
  3. In a medium pot, melt butter over medium heat. Sauté minced garlic for about 2 minutes until fragrant. Add heavy cream, lemon zest, and dry white grape juice; cook until slightly thickened.
  4. Combine drained pasta, baby spinach, and capers into the sauce mixture. Flake in the baked salmon gently and mix until well combined.
