  • 2 cups mushrooms (sliced)
  • 3 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes
  • 1/3 cup Kalamata olives (sliced)
  • 1/2 cup heavy cream
  • 1/2 cup chicken stock
  • 1 cup Parmesan cheese (freshly grated)
  • 2 cups fresh spinach
  • 1/3 cup all-purpose flour
  • 1 teaspoon paprika
  • 2 teaspoons dried thyme (divided)
  • 2 teaspoons dried oregano (divided)
  • 1 teaspoon sea salt (divided)
  • 1 teaspoon freshly ground pepper (divided)
  • 1 teaspoon chili flakes (plus more or less to taste)
  • 4 tablespoons olive oil (divided)

Instructions

  1. In a shallow bowl, mix flour, paprika, thyme, oregano, salt, and pepper. Coat each chicken breast in the mixture.
  2. Heat olive oil in a large skillet over medium heat. Sear the chicken for 3-5 minutes on each side until golden brown.
  3. Remove the chicken and set aside. In the same skillet, add more olive oil and sauté garlic, sun-dried tomatoes, olives, and mushrooms for about 3-5 minutes.
  4. Pour in heavy cream and chicken stock; stir well. Add Parmesan cheese and spinach, allowing the sauce to simmer until thickened.
  5. Return the chicken to the skillet and cook until it reaches an internal temperature of 165°F.
  6. Adjust seasonings as needed before serving warm.
