  • Kosher salt
  • Freshly ground black pepper
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 1 tablespoon all-purpose flour
  • 1 1/4 cups heavy cream
  • Juice and zest of 1 lemon
  • 2 tablespoons chopped dill

Instructions

  1. Season the salmon fillets with kosher salt and black pepper. Heat olive oil in a large skillet over medium-high heat. Cook salmon skin-side up for about 6 minutes until golden, then flip and cook for another 5 minutes until crispy.
  2. Lower the heat and melt butter in the same skillet. Add minced garlic and sauté for about 30 seconds until fragrant. Sprinkle in flour and stir continuously for another 30 seconds.
  3. Whisk in heavy cream and simmer for 2 to 4 minutes until slightly thickened. Stir in lemon zest, juice, and chopped dill; adjust seasoning if necessary.
  4. Return the cooked salmon to the skillet and simmer gently in the sauce for an additional minute before serving.
