Ingredients

Scale
  • 1 pound boneless skinless chicken breasts or thighs
  • 1 cup basmati rice
  • 1 cup heavy cream or half & half
  • ½ cup chicken broth
  • 2 tablespoons olive oil
  • 3 cloves garlic
  • Fresh parsley (for garnish)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons butter
  • 1 small onion (finely diced)
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ½ teaspoon dried oregano
  • ½ cup Parmesan cheese (grated)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh parsley (chopped)
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken with garlic powder, onion powder, Italian seasoning, paprika, salt, and black pepper. Sear until golden brown and cooked through.
  2. Remove chicken from the skillet. In the same pan, melt butter and sauté minced garlic and diced onion until fragrant. Stir in heavy cream and broth, then add thyme, rosemary, oregano, and Parmesan cheese.
  3. In another pot (or the same skillet), combine rinsed basmati rice with chicken broth, salt, and pepper. Bring to a boil, reduce heat to low, cover tightly, and cook until fluffy.
  4. Return chicken to the skillet with sauce; simmer for 5-10 minutes to meld flavors.
  5. Serve chicken over rice topped with fresh parsley and lemon zest if desired.
