  • 2 chicken breasts
  • Salt & pepper
  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 3 cloves garlic (minced)
  • 1/2 cup chicken broth or dry white grape juice
  • 1 cup heavy/whipping cream
  • 1/2 cup freshly grated parmesan cheese
  • 1 tablespoon fresh parsley (chopped)

Instructions

  1. Prepare the chicken by cutting the breasts in half lengthwise and seasoning them with salt, pepper, and garlic powder.
  2. Heat olive oil and butter in a skillet over medium-high heat. Sear the chicken for 5-6 minutes on each side until golden brown. Remove and tent with foil.
  3. In the same skillet (off heat), add flour and minced garlic; stir for about a minute. Gradually whisk in chicken broth or grape juice until smooth.
  4. Return to low heat, stir in cream and let it thicken slightly. Mix in parmesan cheese until melted.
  5. Return chicken to the skillet, coating it with the sauce, and garnish with parsley before serving.
