  • 1/4 cup fresh squeezed lemon juice
  • 1 Tablespoon Califia unsweetened almond milk
  • 1/4 cup loosely packed fresh parsley
  • 3/4 cup olive oil
  • 1 Tablespoon rice vinegar
  • 1 Tablespoon minced shallots
  • Pinch of salt
  • 4 slices pineapple
  • 1 avocado, sliced
  • 1 corn on the cob
  • 1/2 cup pepitas
  • 1 cup fresh blueberries
  • 1 Tablespoon olive oil
  • 23 cups fresh mixed greens

Instructions

  1. Prepare the dressing by blending orange juice, lemon juice, almond milk, olive oil, rice vinegar, minced shallots, parsley, and salt in a mason jar until smooth.
  2. Preheat the grill to medium-high heat. Brush pineapple slices with olive oil and grill for 2 minutes on each side until caramelized.
  3. Grill the corn on the cob for about 5 minutes per side until charred. Cut kernels off once cool.
  4. Assemble by filling bowls with mixed greens, adding grilled pineapple, avocado slices, corn kernels, pepitas, and blueberries.
  5. Drizzle with creamy citrus dressing before serving.
