  • 1 lb gnocchi (store-bought)
  • 1 lb chicken or turkey sausage (casings removed)
  • 2 tsp fresh thyme (chopped)
  • 2 tsp fresh sage (chopped)
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese (freshly grated)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Toss the cubed butternut squash with olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for 25-30 minutes until tender.
  2. In a large skillet over medium heat, cook the sausage until browned, about 5-7 minutes.
  3. Lower the heat and add heavy cream, roasted squash, thyme, and sage to the skillet. Stir gently for another 3-5 minutes until heated through.
  4. Boil salted water in another pot; cook gnocchi according to package instructions until they float (about 2-3 minutes). Drain well.
  5. Combine cooked gnocchi into the creamy sauce along with freshly grated Parmesan cheese. Mix gently until well combined.
