  • ½ tablespoon olive oil
  • ½ cup finely diced yellow onion
  • ½ cup finely diced bell pepper
  • 2 pounds 80% lean ground beef (or alternative meats)
  • 1 cup crushed Ritz crackers
  • 2 whisked eggs
  • 1 cup shredded sharp cheddar cheese
  • ½ cup whole milk
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • ½ to ¾ cup ketchup
  • 2 tablespoons brown sugar
  • 1 teaspoon yellow mustard

Instructions

  1. Preheat the oven to 350°F.
  2. In a small pan, sauté diced onions and bell peppers in olive oil until softened, about 5 minutes.
  3. In a large bowl, mix whisked eggs, crushed crackers, sautéed vegetables, cheese, milk, salt, and pepper until just combined.
  4. Add ground beef and mix gently without overworking.
  5. Shape into a loaf and place in a loaf pan.
  6. Bake for 30 minutes before adding the topping mixture of ketchup, brown sugar, and mustard.
  7. Return to the oven and bake for another 30-40 minutes until reaching an internal temperature of 155°F.
  8. Let rest for 15 minutes before slicing and serving.
