  • 12 ounces bowtie or rotini pasta (uncooked)
  • 1 pound ground beef
  • 1 ounce package taco seasoning
  • 8.75 ounces canned corn (drained)
  • 15 ounces black beans (drained and rinsed)
  • 1 cup cherry tomatoes (halved)
  • 8 ounces cheddar cheese (cubed)
  • ½ red onion (diced)
  • 1 green bell pepper (chopped)
  • 1 cup mayonnaise
  • ¼ cup barbecue sauce
  • 1 Tablespoon spicy brown mustard
  • 2 teaspoons hot sauce

Instructions

  1. Cook the pasta according to package directions until al dente. Drain and let cool.
  2. In a skillet over medium heat, brown the ground beef. Add taco seasoning and black beans; drain excess grease and let cool.
  3. In another pan, cook turkey bacon until crispy; crumble when cool.
  4. In a bowl, whisk together mayonnaise, barbecue sauce, spicy brown mustard, and hot sauce to make the dressing.
  5. In a large bowl, mix cooled pasta, beef mixture, corn, beans, tomatoes, cheese, onion, and bell pepper.
  6. Pour dressing over the salad mixture and toss gently to combine.
  7. Serve immediately or chill for an hour to enhance flavors.
