  • 3 lb boneless chuck roast
  • 3 lbs yellow onions
  • 2 cloves garlic
  • 1 cup apple vinegar or beef stock
  • 2½ cups beef stock
  • Fresh herbs (rosemary, bay leaf)
  • Olive oil
  • 1/2 tsp fine sea salt
  • 1/2 tsp freshly ground black pepper
  • 1 tbsp maple syrup or brown sugar
  • 1 tbsp all-purpose flour or gluten-free all-purpose flour

Instructions

  1. Season the chuck roast with salt and pepper. Heat olive oil in a skillet over medium-high heat, searing the roast on all sides until browned.
  2. In another pot, heat olive oil and add sliced onions, garlic, salt, pepper, and maple syrup. Cook slowly until caramelized.
  3. Sprinkle flour over the onions, stir well, then gradually add apple vinegar (or beef stock) and beef stock along with rosemary and bay leaf.
  4. Place the seared roast in a Dutch oven or slow cooker. Pour the onion mixture over it and braise at 300°F for about 3 hours or on low in a slow cooker for 6 hours.
  5. Let rest for 10 minutes before slicing and serving.
