  • ½ cup whole milk (slightly warmed)
  • 1 teaspoon instant coffee granules
  • 1 large egg (room temperature)
  • ½ teaspoon vanilla extract
  • 4 tablespoons unsalted butter (room temperature)
  • 5 tablespoons unsalted butter (room temperature)
  • 2/3 cup dark brown sugar (or light brown sugar)
  • 2 teaspoons ground cinnamon
  • 1 ½ teaspoons instant coffee granules
  • 2 ounces cream cheese (softened)
  • 4 tablespoons unsalted butter (softened)
  • 1 cup powdered sugar
  • 4 tablespoons heavy cream
  • ¾ teaspoon instant coffee granules

Instructions

  1. Prepare the Tangzhong: Whisk together ¼ cup water and ¼ cup flour in a saucepan over medium heat until thickened. Let cool.
  2. Mix dry ingredients: Combine remaining flour, sugar, yeast, and salt in a mixing bowl.
  3. Combine wet ingredients: Dissolve instant coffee in warmed milk, then mix with egg and cooled Tangzhong into dry ingredients.
  4. Incorporate butter: Gradually add softened butter while kneading until the dough is smooth and elastic.
  5. Let rise: Shape into a ball, cover, and let rise in a warm place until doubled in size (about 45-60 minutes).
  6. Make filling: Beat together softened butter, brown sugar, cinnamon, and coffee granules.
  7. Roll out dough: After rising, roll into a rectangle and spread filling evenly before cutting into strips.
  8. Shape rolls: Roll each strip tightly and place in a baking pan to rise again until doubled.
  9. Bake: Preheat oven and bake for 20-23 minutes until golden brown.
  10. Prepare frosting: Mix softened cream cheese with butter, then add powdered sugar, heavy cream, and instant coffee until smooth.
  11. Frost and serve while warm.
