  • 2 tbsp ground coffee (finely ground)
  • 1 tsp ground cinnamon
  • 1 cup salted butter (room temperature)
  • ½ cup dark brown sugar (packed)
  • 2 tsp pure vanilla extract
  • Turbinado sugar (for topping – optional)

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a medium bowl, whisk together flour, ground coffee, and cinnamon.
  3. In a large bowl or stand mixer, cream room-temperature butter and dark brown sugar until light and fluffy (about 3 minutes). Mix in vanilla.
  4. Gradually add dry ingredients to wet mixture until fully combined.
  5. Turn dough onto a floured surface and shape into a flat rectangle about ⅓- to ½-inch thick. Cut into rectangles and prickle with a fork.
  6. Chill on a baking sheet for about 10 minutes before baking for approximately 20 minutes or until lightly browned at the bottom.
