  • 4 cod fillets (6 ounces each)
  • 2 cups shredded cabbage
  • 1 cup shredded red cabbage
  • 1 to 2 large carrots (shredded)
  • ½ cup fresh cilantro
  • 3 tablespoons olive oil
  • 1 can (14.5 ounces) black beans (rinsed/drained)
  • Fresh lime wedges and avocado for serving
  • ⅔ cup mayonnaise (or plain yogurt)
  • 1 tablespoon taco seasoning
  • 2 tablespoons fresh lime juice
  • 1 tablespoon taco seasoning
  • ½ red onion (diced)
  • ½ red bell pepper (seeded and membrane removed, finely diced)
  • ½ jalapeno pepper (seeded and membrane removed, finely diced)
  • 1 cup frozen corn kernels (thawed)

Instructions

  1. Prepare the sauce by mixing mayonnaise (or yogurt), taco seasoning, and fresh lime juice in a small bowl.
  2. Heat olive oil in a skillet over medium-high heat. Season cod fillets with taco seasoning and cook until golden brown on both sides (about 4-5 minutes per side).
  3. In another pan, sauté diced red onion, red bell pepper, jalapeno pepper, corn kernels, and black beans in more olive oil until warmed through (around 5-7 minutes).
  4. Assemble bowls starting with shredded cabbage as a base. Top with cooked cod, sautéed veggies, avocado slices, green onions, cilantro, and finish with lime wedges.
