  • pounds onions (chopped)
  • 2 tablespoons olive oil
  • 2 pounds beef chuck roast (cubed into 1 to 1½-inch pieces)
  • ½ green pepper (chopped)
  • 3 cloves garlic (minced)
  • ½ tomato (seeded and diced)
  • Sweet Hungarian paprika
  • Beef broth
  • Dry apple vinegar
  • Fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 325°F. In a heavy pot or Dutch oven, heat olive oil over medium heat. Sauté chopped onions with salt for about 15-20 minutes until golden brown.
  2. Season cubed beef with remaining salt and black pepper. Add to the pot and brown on all sides for about 5-10 minutes.
  3. Stir in green pepper, diced tomato, garlic, paprika, marjoram, caraway seed, tomato paste, beef broth, dry apple vinegar, and bay leaf. Bring to a boil.
  4. Cover pot slightly ajar and place in the preheated oven. Braise for about 1½ hours or until the beef is fork-tender.
  5. Remove from oven and garnish with fresh parsley before serving.
