  • 1 large white onion, chopped
  • 1 green bell pepper, chopped (or jalapeños for spice)
  • 1 stalk celery, chopped
  • 5 garlic cloves, chopped
  • 3 tablespoons tomato paste
  • 2 cups apple vinegar (or beef stock)
  • 2 cups beef stock
  • 1 tablespoon Worcestershire sauce (non-alcoholic)
  • 1 tablespoon Italian seasoning
  • 2 bay leaves
  • 1 pound yellow potatoes, cut into bite-sized pieces
  • 3 large carrots, cut into bite-sized pieces

Instructions

  1. In a large bowl, mix flour, paprika, salt, and black pepper. Coat each chunk of beef in the mixture.
  2. Heat olive oil in a Dutch oven over medium heat. Sear the beef in batches until browned on all sides; transfer to a plate.
  3. Sauté onion, bell pepper, and celery in the remaining oil for about five minutes until softened.
  4. Stir in garlic and tomato paste; cook for one minute until fragrant.
  5. Add apple vinegar and beef stock; scrape up any browned bits from the pot.
  6. Return seared beef to the pot along with juices, Italian seasoning, and bay leaves.
  7. Bring to a boil; then reduce heat and simmer for two hours.
  8. Add potatoes and carrots; simmer uncovered for an additional hour until vegetables are tender.
