  • 3 overripe mashed bananas
  • 4 tbsp melted vegan butter
  • 3/4 cup maple syrup
  • 1 cup unsweetened almond or oat milk
  • 1 1/2 cup gluten-free all-purpose flour
  • 1 cup old-fashioned rolled oats
  • For the swirl: 4 tbsp melted vegan butter
  • 1/3 cup light brown sugar
  • 2 tbsp cinnamon
  • For the cream cheese glaze: 3/4 cup powdered sugar
  • 2 tbsp melted vegan butter
  • 2 oz softened vegan cream cheese

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a greased loaf pan.
  2. In a large bowl, mix mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla extract.
  3. Add baking powder, baking soda, cinnamon, salt, flour, and oats; fold gently until combined.
  4. In another bowl, mix melted vegan butter, light brown sugar, and cinnamon for the swirl topping.
  5. Pour half of the batter into the pan; drizzle half of the swirl mixture on top and gently swirl with a knife. Repeat with remaining batter and swirl.
  6. Bake for about 45 minutes or until a toothpick comes out clean. Let cool before drizzling with cream cheese glaze.
