  • 2 cups warm water
  • 2 tsp active dry yeast
  • 1 tsp white granulated sugar
  • 4 cups bread flour
  • 1 ½ tsp salt
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter (melted)
  • 6 tbsp brown butter
  • ⅓ cup light brown sugar
  • 2 tsp cinnamon
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2½ tbsp milk

Instructions

  1. Activate the yeast by combining warm water and sugar in a bowl. Sprinkle yeast over top and let sit until foamy (10-15 minutes).
  2. In a large bowl, whisk together flour and salt. Add activated yeast mixture and olive oil; stir until a sticky dough forms.
  3. Lightly coat the dough with olive oil, cover it with plastic wrap, and refrigerate overnight.
  4. Grease a baking pan and melt butter in it. Deflate the dough slightly and place it in the pan to rise again for about 1½ – 2 hours.
  5. Prepare brown butter by melting butter until golden brown, then mix in brown sugar and cinnamon.
  6. Preheat oven to 450°F. Dimple the risen dough using wet fingertips, then pour the cinnamon topping evenly over it.
  7. Bake for about 20-25 minutes until golden brown, then let cool slightly before drizzling with icing made from powdered sugar, milk, and vanilla.
