  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 2 cups pomegranate juice
  • ¼ cup brown sugar
  • ¼ cup fresh squeezed orange juice
  • 1 tablespoon orange zest
  • Pomegranate seeds, for garnish
  • Orange slices, for garnish
  • Parsley, for garnish
  • Green onions, for garnish

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Place the salmon skin-side down on the prepared sheet. Season it with salt and black pepper.
  3. In a saucepan over medium heat, combine pomegranate juice, brown sugar, orange juice, and zest. Bring to a boil then reduce heat to simmer for 20-25 minutes until thickened.
  4. Brush the glaze generously over the salmon.
  5. Bake for 30-38 minutes until the internal temperature reaches 145°F (63°C).
  6. Garnish with pomegranate seeds, orange slices, parsley, and green onions before serving.
