  • 1 teaspoon vanilla
  • 3/4 cup chocolate chips
  • 1 cup raspberries
  • 6 tablespoons unsalted butter (for frosting)
  • 1 oz full-fat cream cheese
  • 1 and 1/2 to 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  2. In another bowl, cream softened butter and sugars until light. Add egg and vanilla; mix well.
  3. Gradually incorporate dry ingredients into the wet mixture. Fold in chocolate chips.
  4. Scoop tablespoon-sized portions onto parchment-lined sheets. Bake for about 8 minutes.
  5. For frosting, beat together softened butter and cream cheese until smooth. Gradually add powdered sugar and fold in raspberries.
  6. Once cookies are cool, spread frosting on one cookie and sandwich with another.
