  • ¾ cup mini semi-sweet chocolate chips
  • 1 cup heavy whipping cream (cold)
  • 1 tsp pure vanilla extract
  • 1 large egg (room temperature)
  • 1 tbsp heavy whipping cream (for glaze)
  • 1 cup powdered sugar (sifted)
  • 1 tsp instant espresso powder (for glaze)
  • 1 tbsp brewed coffee (or espresso, for glaze)
  • 12 tbsp milk or cream (or water, for glaze)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine flour, brown sugar, baking powder, salt, and espresso powder.
  3. Cut in cold butter until the mixture resembles coarse crumbs. Stir in chocolate chips.
  4. Whisk together vanilla extract and heavy cream in a separate bowl; pour into dry ingredients and mix gently until just combined.
  5. Turn dough onto a floured surface; shape into an 8-inch circle and cut into 8 triangles.
