  • ½ tsp Dijon mustard
  • 1 tsp honey
  • 1 tsp kosher salt
  • ½ tsp freshly cracked black pepper
  • 4 slices sharp cheddar cheese
  • 1 beefsteak tomato, sliced
  • 4 slices sturdy bread (French, focaccia, or sourdough)
  • Softened butter (for grilling)

Instructions

  1. Prepare the Chipotle Mayo: Whisk together egg yolk, Dijon mustard, lime juice, honey, kosher salt, and black pepper in a bowl. Gradually drizzle in the oil while whisking until emulsified. Stir in smoked paprika and chopped chipotle pepper.
  2. Cook the Chicken: Season chicken with salt and pepper, then grill or pan-sear over medium heat for 4–5 minutes per side until cooked through. Slice if necessary.
  3. Assemble the Panini: Butter one side of each slice of bread. Spread chipotle mayo on the opposite side. Layer cheese, chicken, tomato slices, and more cheese between two slices of bread.
