  • 1 medium onion (chopped)
  • 1 jalapeno pepper (chopped, optional)
  • 4 cloves garlic (chopped)
  • 2 pounds skinless chicken thighs or breasts
  • 16 ounce can tomato sauce
  • 7 ounce can chipotles in adobo sauce
  • 1 tablespoon chili powder
  • 1 teaspoon Mexican oregano
  • ½ teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pan over medium heat. Add chopped onion and jalapeno; sauté until softened, about 5 minutes.
  2. Stir in chopped garlic and cook for another minute until fragrant.
  3. Season chicken with salt and pepper, then add to the pan. Brown for about 2 minutes on each side.
  4. Blend tomato sauce and chipotles in a food processor until smooth; pour over chicken.
  5. Add chili powder, oregano, cumin, and additional seasoning to taste. Bring to a boil then reduce heat; simmer for 30 minutes.
  6. Shred the chicken using two forks, then return to the pot and simmer for an additional 5 minutes.
