  • 8 ounces cremini mushrooms (sliced)
  • 1/2 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 2/3 cup chicken broth
  • 1/2 cup full-fat sour cream
  • 3 tablespoons olive oil (divided)
  • 1 tablespoon butter
  • 1/2 teaspoon garlic powder
  • Salt & pepper (to taste)
  • Flour (for dredging)
  • 1 tablespoon Dijon mustard (or more, to taste)

Instructions

  1. Cut chicken into 1-inch pieces, season with garlic powder, salt, and pepper, then coat with flour.
  2. Heat 2 tablespoons olive oil in a skillet over medium-high heat. Sear chicken until golden brown and cooked through, about 5-7 minutes per batch. Remove from skillet.
  3. In the same skillet, melt butter and sauté mushrooms and onions for 6-8 minutes until golden.
  4. Stir in Dijon mustard and minced garlic; cook for 1 minute.
  5. Add chicken broth to deglaze the pan, scraping up any browned bits. Return chicken to the skillet and simmer for 2 minutes.
  6. Stir in sour cream gently; heat through without boiling. Adjust seasoning if necessary.
