  • 3 large chicken breasts
  • 8 ounces cremini mushrooms
  • 2 cloves garlic
  • 1/2 cup apple juice
  • 1.5 cups heavy cream
  • 6 slices Muenster cheese
  • Salt & pepper (to taste)
  • 1 tablespoon olive oil
  • 4 tablespoons butter (divided)
  • Flour for dredging + 2 tablespoons flour

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut chicken breasts in half lengthwise; season with salt and pepper, then coat lightly in flour.
  3. In a skillet over medium-high heat, heat olive oil and 1 tablespoon of butter. Brown the chicken (3-4 minutes per side) until lightly golden.
  4. Sauté mushrooms in the same skillet with another tablespoon of butter until seared.
  5. For the sauce, add remaining butter to the skillet; stir in flour and minced garlic for about one minute.
  6. Gradually whisk in apple juice and then heavy cream until smooth.
  7. Combine sautéed mushrooms with chicken in a casserole dish; pour creamy sauce over everything and top with Muenster cheese.
  8. Cover and bake for 20 minutes, then broil for a few minutes until golden brown.
