  • 1 cup half-and-half
  • 3 cups fresh spinach
  • 1/3 cup softened cream cheese
  • 1 ½ cups white grape juice (or chicken broth)
  • ¼ cup Parmesan cheese (finely shredded)
  • 2 tablespoons butter
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 teaspoons Italian seasoning
  • ½ cup flour
  • 1 teaspoon garlic powder
  • 4 cloves garlic (minced)
  • ½ fresh lemon or 1.5 tablespoons lemon juice (optional)
  • Fresh parsley (to garnish)

Instructions

  1. Pound each chicken breast to about ½ inch thick for even cooking.
  2. Dredge the chicken in flour mixed with salt, pepper, and Italian seasoning.
  3. Sear the chicken in olive oil and butter over medium-high heat until golden brown.
  4. Remove the chicken and deglaze the skillet with white grape juice or broth.
  5. Stir in minced garlic and reduce the mixture by half.
  6. Slowly add warmed half-and-half, then mix in cream cheese until smooth.
  7. Add fresh spinach until wilted and return the chicken to heat through.
