  • 20 ounces refrigerated cheese tortellini
  • 1 tablespoon fresh sage (chopped)
  • 8 ounces cremini mushrooms (sliced)
  • 3 tablespoons butter (divided)
  • 1 tablespoon olive oil
  • 1 clove garlic (minced)
  • ½ cup freshly grated parmesan cheese
  • Salt & pepper (to taste)

Instructions

  1. Cook the tortellini according to package instructions in boiling water until al dente. Drain and set aside.
  2. While the tortellini cooks, slice the mushrooms and chop the sage.
  3. In a skillet over medium-high heat, melt 1 tablespoon of butter with olive oil. Add chopped sage and cook for about a minute until crisp.
  4. Add sliced mushrooms and minced garlic to the skillet along with another tablespoon of butter. Sauté for about 5 minutes until browned.
  5. Combine cooked tortellini with the mushroom mixture, add remaining butter, grated parmesan, salt, and pepper. Toss well and serve immediately.
