  • 4 pounds beef short ribs
  • 1 cup soy sauce
  • ½ cup brown sugar
  • ¼ cup rice vinegar
  • ¼ cup hoisin sauce
  • 1 tablespoon ginger, minced
  • 1 tablespoon garlic, minced
  • 2 tablespoons sesame oil
  • 1 tablespoon chili paste (optional)
  • 1 teaspoon black pepper
  • 2 green onions, chopped
  • Sesame seeds

Instructions

  1. Rinse and pat dry the beef short ribs.
  2. In a large bowl, whisk together soy sauce, brown sugar, rice vinegar, hoisin sauce, ginger, garlic, sesame oil, chili paste (if using), and black pepper to create the marinade.
  3. Marinate the beef in a resealable bag or bowl for at least 2 hours (overnight is best).
  4. Preheat the oven to 325°F (160°C).
  5. Sear the marinated ribs in a skillet over medium-high heat until browned (3-4 minutes per side).
  6. Transfer ribs to a roasting pan and pour remaining marinade over them.
  7. Cover with aluminum foil and roast for 3-4 hours until fork-tender.
  8. Remove foil during the last 30 minutes to allow caramelization.
  9. Let rest for 10-15 minutes before serving, garnished with green onions and sesame seeds.
