  • 90 g granulated sugar
  • 1 tbsp water
  • 25 g butter
  • 100 g heavy cream
  • 240 g all-purpose flour
  • 1 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 100 g granulated sugar (for cake)
  • 200 g apples (grated)
  • 110 g vegetable oil
  • 2 eggs (room temperature)
  • 140 g sour cream

Instructions

  1. Prepare the caramel sauce: In a saucepan, combine granulated sugar and water over medium heat. Stir gently until dissolved. Cook until amber in color, about 5-7 minutes. Remove from heat and add butter, heavy cream, and salt. Let cool.
  2. Mix dry ingredients in one bowl (flour, baking powder, baking soda, salt, cinnamon) and wet ingredients in another bowl (sugars, grated apples, oil, eggs, sour cream).
  3. Combine wet and dry mixtures gently until just combined.
  4. Preheat oven to 350°F (175°C). Grease a pan and pour in batter. Bake for about 45 minutes or until a toothpick comes out clean.
  5. While cooling, prepare the buttercream by beating room temperature butter with powdered sugar until creamy; mix in caramel and vanilla.
  6. Once cooled completely, frost the cake with buttercream and drizzle with extra caramel.
