- 24 small raw shrimp
- ½ cup mayonnaise
- 2 tablespoons Creole mustard
- ¼–½ teaspoon Cajun seasoning (to taste)
- 2 tablespoons finely chopped green onions
- 4 teaspoons finely chopped pickled jalapeños
- 2 teaspoons hot sauce
- 1 tablespoon avocado oil (or other neutral oil)
- Salt and pepper to taste
- Boil the eggs for 13 minutes in salted water, then cool in ice water for easier peeling.
- Sear seasoned shrimp in avocado oil for 1–2 minutes until golden. Set aside.
- Peel the cooled eggs, slice them in half, and transfer yolks to a bowl.
- Mix egg yolks with mayonnaise, mustard, green onions, jalapeños, hot sauce, and horseradish until smooth; chill for 15–30 minutes.
- Pipe the filling into egg whites and top with seared shrimp. Garnish as desired.
