2 tbsp Cajun seasoning
1 tbsp tomato paste
1/2 cup low-sodium chicken broth
1/2 cup tomato sauce
1 tsp brown sugar (optional)
salt (to taste)
2 tbsp unsalted butter
2 tbsp all-purpose flour
1 cup whole milk
8 oz sharp cheddar or American cheese, freshly shredded
1/4 tsp paprika
4–6 brioche hamburger buns (split, toasted)
softened butter (for toasting, as needed)
freshly ground black pepper (to finish)
Instructions
Heat olive oil in a skillet over medium-high heat. Add ground chicken and cook until no longer pink, about 5–7 minutes.
Stir in chopped onion and cook until translucent (3–4 minutes), then add minced garlic and Cajun seasoning; cook for another minute.
Mix in tomato paste, broth, tomato sauce, and optional brown sugar. Simmer uncovered for 8–10 minutes until thickened; adjust salt to taste.
In a separate saucepan over medium heat, melt butter and whisk in flour to create a roux (about 1 minute). Gradually whisk in milk until thickened (4–5 minutes), then stir in cheese and paprika until smooth.
Toast brioche buns lightly, assemble with the Cajun filling, drizzle with cheese sauce, and enjoy!
