- 2 lbs boneless chicken breasts, cut into cubes
- 5 medium sweet potatoes, cut into small cubes
- 2 heads broccoli, cut into small florets
- 1 cup buffalo sauce
- 1/2 cup avocado oil or olive oil
- 1/2 tsp salt
- 1 tsp pepper
- 2 tsp garlic powder
- 1 cup shredded cheddar cheese
- 1/4 cup chopped green onion
- Preheat your oven to 425°F (220°C) and grease a 9×13 casserole dish.
- Chop the chicken, sweet potatoes, and broccoli into small pieces.
- In a bowl, mix buffalo sauce with avocado oil, salt, pepper, and garlic powder.
- Toss sweet potatoes in half of the buffalo sauce mixture and roast in the oven for about 30 minutes.
- Combine the remaining buffalo sauce with chicken and broccoli; then layer over roasted sweet potatoes.
- Bake for an additional 20-25 minutes until chicken is cooked through (165°F internal temperature).
- Top with cheese and bake for another five minutes until melted.
