  • 2 lbs boneless chicken breasts, cut into cubes
  • 5 medium sweet potatoes, cut into small cubes
  • 2 heads broccoli, cut into small florets
  • 1 cup buffalo sauce
  • 1/2 cup avocado oil or olive oil
  • 1/2 tsp salt
  • 1 tsp pepper
  • 2 tsp garlic powder
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onion

Instructions

  1. Preheat your oven to 425°F (220°C) and grease a 9×13 casserole dish.
  2. Chop the chicken, sweet potatoes, and broccoli into small pieces.
  3. In a bowl, mix buffalo sauce with avocado oil, salt, pepper, and garlic powder.
  4. Toss sweet potatoes in half of the buffalo sauce mixture and roast in the oven for about 30 minutes.
  5. Combine the remaining buffalo sauce with chicken and broccoli; then layer over roasted sweet potatoes.
  6. Bake for an additional 20-25 minutes until chicken is cooked through (165°F internal temperature).
  7. Top with cheese and bake for another five minutes until melted.
