2 boneless, skinless chicken breasts
1/2 cup hot buffalo sauce
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika
Salt and pepper to taste
2 cups cooked brown rice
1 cup corn kernels (fresh or canned)
1 cup black beans, rinsed and drained
1 cup cherry tomatoes, halved
1/2 cup diced red onion
1 avocado, sliced
1/4 cup ranch dressing
Fresh cilantro for garnish
Instructions
Preheat oven to 400°F (200°C).
In a small bowl, mix together olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Rub this mixture all over your chicken breasts.
Place your seasoned chicken in a baking dish and bake for about 20-25 minutes until fully cooked. Let it rest after baking.
While your chicken is baking, combine cooked brown rice, corn kernels, black beans, cherry tomatoes, and diced red onion in a large bowl.
Divide your rice mixture into serving bowls. Top each with slices of baked chicken, avocado slices, and drizzle on some buffalo sauce.
