  • 2 boneless, skinless chicken breasts
  • 1/2 cup hot buffalo sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups cooked brown rice
  • 1 cup corn kernels (fresh or canned)
  • 1 cup black beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced red onion
  • 1 avocado, sliced
  • 1/4 cup ranch dressing
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, mix together olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Rub this mixture all over your chicken breasts.
  3. Place your seasoned chicken in a baking dish and bake for about 20-25 minutes until fully cooked. Let it rest after baking.
  4. While your chicken is baking, combine cooked brown rice, corn kernels, black beans, cherry tomatoes, and diced red onion in a large bowl.
  5. Divide your rice mixture into serving bowls. Top each with slices of baked chicken, avocado slices, and drizzle on some buffalo sauce.
  6. Add a drizzle of ranch dressing over each bowl and sprinkle with fresh cilantro.
  7. Serve immediately.
