  • 4 ounces semisweet chocolate, chopped
  • ¾ cup unsalted butter
  • ¾ cup granulated sugar
  • ½ cup light brown sugar
  • 3 large eggs
  • 1½ teaspoons vanilla extract
  • 1 cup all-purpose flour
  • ¾ cup cocoa powder
  • ¾ teaspoon salt
  • 6 ounces semisweet chocolate (for ganache)
  • ¾ cup heavy whipping cream
  • Fleur de sel (for sprinkling)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
  2. Melt semisweet chocolate and butter over low heat until smooth. Remove from heat.
  3. Stir in granulated sugar and light brown sugar until combined. Add eggs one at a time, whisking well. Mix in vanilla.
  4. Sift together flour, cocoa powder, and salt; fold into the wet mixture until just combined.
  5. Pour batter into prepared pan and bake for 20–25 minutes or until a toothpick comes out with moist crumbs.
  6. Cool completely before cutting into small squares for petit fours.
  7. For ganache, heat heavy whipping cream until simmering; pour over chopped chocolate and stir until smooth.
  8. Coat each petit four with ganache and sprinkle with fleur de sel.
