  • 1/2 cup unsalted butter (for toffee)
  • 1/2 cup light brown sugar (packed)
  • 6 ounces semisweet chocolate chips
  • 1 cup unsalted butter (cubed) (for cookie dough)
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup light brown sugar (packed)
  • 1/3 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract

Instructions

  1. Preheat your oven to 425°F. Line a baking dish with parchment paper and arrange saltine crackers in an even layer.
  2. In a saucepan over medium-high heat, melt butter and brown sugar until boiling. Allow it to bubble without stirring for about 4-5 minutes before pouring over saltines. Bake for 4-5 minutes until bubbly, then sprinkle chocolate chips on top and let them melt.
  3. To make the cookie dough, brown the cubed butter in a separate saucepan over medium heat until golden brown. Allow it to cool slightly.
  4. Whisk together flour and baking soda in a bowl. In another bowl, mix sugars with eggs and vanilla, then add the browned butter once cooled. Combine wet and dry ingredients.
  5. Chill the dough briefly while chopping the toffee into pieces, then fold into the dough.
  6. Preheat your oven to 350°F again. Scoop tablespoon-sized balls onto a lined baking sheet; bake for about 8-10 minutes until golden around edges.
  7. Sprinkle reserved toffee bits on top while warm; let cool before serving.
