  • 1/3 cup roasted sunflower seeds

  • 2/3 cup mayonnaise
  • 1 Tbsp apple cider vinegar
  • Zest of 1 small lemon
  • Zest of 1/2 orange
  • Fresh lemon juice

Instructions

  1. Blanch the broccoli florets in boiling salted water for 20 seconds. Drain and transfer to an ice bath to cool.
  2. Soak chopped red onion in cold water for five minutes to mellow its flavor, then drain.
  3. In a bowl, whisk together mayonnaise, apple cider vinegar, sugar, citrus zests, lemon juice, poppy seeds, and black pepper until smooth.
  4. In a large bowl, combine cooled broccoli, drained onion, cranberries, almonds, sunflower seeds, and cheese. Gently toss with the dressing until well coated.
