  • 1 tablespoon olive oil
  • 1/4 red onion, sliced
  • 4 slices sourdough bread
  • 2 tablespoons soft butter, for brushing the bread
  • 4 tablespoons fig butter or jam
  • 5 ounces brie cheese, thinly sliced
  • 1 large Granny Smith apple, thinly sliced
  • 1/2 cup baby arugula

Instructions

  1. Heat olive oil in a skillet over medium heat. Add sliced red onions and caramelize for about 5 minutes.
  2. Butter the outside of each slice of sourdough and spread fig butter on the inside. Layer brie, apple slices, caramelized onions, and arugula on one slice before topping with another.
  3. Grill sandwiches in a nonstick skillet over medium-high heat for 2-3 minutes per side until golden brown and cheese is melted. Serve warm.
