  • 2 large chicken breasts
  • 1/2 teaspoon garlic powder
  • Salt & pepper (to taste)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 medium onion (chopped)
  • 3/4 cup chicken broth (low sodium recommended)
  • 1 (5.2 oz) package Boursin Fine Herbs & Garlic cheese (softened)
  • Chopped parsley (optional)

Instructions

  1. Cut the chicken breasts in half lengthwise and season with garlic powder, salt, and pepper.
  2. In a skillet over medium-high heat, heat olive oil and butter. Sear the chicken for about 5-6 minutes on each side until golden brown. Remove from skillet and set aside.
  3. In the same skillet, sauté chopped onions until softened and lightly browned.
  4. Pour in chicken broth and add softened Boursin cheese. Stir until smooth and let simmer for about five minutes.
  5. Return chicken to the skillet; warm through for a couple of minutes until the sauce thickens slightly.
  6. Taste and adjust seasoning before serving.
