  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons Dijon mustard
  • 4 salmon fillets (about pounds)
  • 2 medium peaches, thinly sliced
  • 2 teaspoons garlic, minced
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes

Instructions

  1. In a bowl, combine peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, garlic, salt, black pepper, and red pepper flakes to create the marinade.
  2. Marinate salmon fillets in half of the marinade for at least 30 minutes in the refrigerator.
  3. Preheat the oven to 375°F (190°C) and sear marinated salmon in an oven-safe skillet for about 2-3 minutes per side.
  4. Add sliced peaches and pour reserved marinade over the salmon.
  5. Bake for 12-15 minutes until the salmon reaches an internal temperature of 145°F.
