  • 2 lbs ground beef
  • 1 cup plain bread crumbs
  • ½ cup milk
  • 2 eggs
  • 1 cup diced onions
  • 1 cup diced bell pepper
  • 1 jalapeño, diced
  • 1 cup cheddar and Monterey jack cheese
  • 1 cup apricot jam
  • ¼ cup dark brown sugar
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp all purpose seasoning
  • 2 tbsp Worcestershire sauce
  • ¼ tsp salt and pepper
  • 1 tbsp sriracha
  • ½ cup BBQ sauce
  • ¼ cup water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine ground beef, bread crumbs, milk, eggs, onions, bell pepper, jalapeño, onion powder, garlic powder, seasoning, Worcestershire sauce, salt, and pepper. Mix well.
  3. Shape the mixture into a loaf on a lined baking sheet.
  4. In another bowl, mix apricot jam, brown sugar, sriracha, BBQ sauce, and water for the glaze.
  5. Spread half of the glaze over the meatloaf before baking. Cook for approximately 75 minutes or until the internal temperature reaches 160°F (70°C). Brush more glaze halfway through cooking.
  6. Allow resting for 10 minutes before slicing.
