  • 100 g active starter
  • 500 g bread flour
  • 355 g room temperature water (335g + 20g for salt)
  • 100 g fresh blueberries
  • Zest of one lemon
  • 10 g salt

Instructions

  1. Feed your starter 6-10 hours before baking.
  2. In a large bowl, combine 335g water, starter, and flour; mix well.
  3. Let the mixture rest covered for 20-30 minutes.
  4. Add remaining water and salt; knead lightly for 1-2 minutes.
  5. Cover and let rise at room temperature for about 30 minutes; fold in blueberries and lemon zest every 30-40 minutes over 2 hours.
  6. Shape the dough and let it rise in a proofing basket for about 2 hours or refrigerate overnight.
  7. Preheat your oven; score the bread and bake at 500°F (260°C) covered for 20 minutes, then uncover and reduce to 400°F (200°C) for another 30-35 minutes.
  8. Allow to cool on a rack for at least an hour before slicing.
