  • 1 lb Mafaldine noodles (or fettuccine/linguine)
  • 3 chicken breasts
  • 4 tablespoons olive oil
  • 6 tablespoons butter
  • 68 cloves garlic (minced)
  • 2 cups heavy whipping cream
  • 1.5 cups shredded Parmesan cheese
  • 4 tablespoons blackened seasoning (divided)
  • Salt and pepper (to taste)
  • 2 tablespoons smoked paprika
  • 1 tablespoon cayenne pepper
  • 1 tablespoon onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano

Instructions

  1. Pound chicken breasts to an even thickness. Coat with olive oil and season both sides with blackened seasoning.
  2. In a skillet over medium-high heat, cook the chicken for about 3-4 minutes on each side until golden brown. Add butter and minced garlic; reduce heat and cook until done.
  3. Remove chicken and add remaining butter to the skillet. Sauté more garlic, then add heavy cream and blackened seasoning; let it simmer until thickened.
  4. Cook pasta according to package instructions; reserve some pasta water before draining.
  5. Combine cooked pasta with the sauce and reserved water until well coated. Slice chicken and lay on top before serving.
