  • 2 cups blackberries
  • 3 tbsp balsamic vinegar
  • 6 tbsp sugar
  • 2 tbsp lemon juice
  • 300 g double cream brie cheese
  • 8 slices sourdough bread
  • Butter (as needed)

Instructions

  1. Prepare the blackberry balsamic jam by combining blackberries, balsamic vinegar, sugar, lemon juice, and a pinch of salt in a saucepan. Bring to a boil, then reduce heat and simmer for 7-10 minutes until thickened. Set aside to cool.
  2. Slice the brie cheese into ½ inch thick slices.
  3. Butter one side of four slices of sourdough bread and place them butter-side down in a heated skillet. Top with brie slices.
  4. Spread blackberry jam on the remaining four slices of bread (butter-side up) and place them on top of the brie.
  5. Cook until both sides are golden brown and the cheese has melted, flipping carefully as needed.
  6. Allow to rest briefly before cutting in half and serving.
