  • 2 lbs beef chuck roast
  • 1 large onion
  • 4 garlic cloves
  • 2 cups beef broth
  • 2 dried guajillo chiles
  • 2 dried ancho chiles
  • 1 chipotle pepper in adobo sauce
  • 1 tablespoon apple cider vinegar
  • 12 corn tortillas
  • 2 cups shredded cheese (Monterey Jack or cheddar)
  • Fresh cilantro and red onion for garnish

Instructions

  1. Season the beef chuck roast with salt and pepper. In a large pot, heat oil over medium heat and sear the beef until browned on all sides.
  2. Add chopped onion and minced garlic to the pot, cooking until softened.
  3. Blend guajillo chiles, ancho chiles, chipotle pepper, apple cider vinegar, cumin, oregano, paprika, and beef broth until smooth. Pour over the seared beef.
  4. Cover and slow-cook for about three hours until the beef is tender.
  5. Shred the cooked beef with two forks and warm the corn tortillas briefly.
  6. Fill each tortilla with shredded beef, roll tightly, and place seam-side down in a baking dish.
  7. Top with shredded cheese and bake at 375°F (190°C) for about 20 minutes until bubbly and golden brown.
  8. Garnish with fresh cilantro and red onion before serving.
