  • 500g extra lean beef mince
  • 1 large onion, finely chopped
  • 3 cloves of garlic, crushed
  • 1 large carrot, finely chopped
  • 1 red bell pepper, finely chopped
  • 2 jalapenos, deseeded and chopped
  • 400g can of kidney beans, drained
  • 800g of chopped tomatoes, canned
  • 10.5 tablespoons of tomato paste
  • 3 cups of beef stock
  • 2 teaspoons of paprika
  • 2 teaspoons of cumin
  • ½ teaspoon of cayenne pepper – optional
  • 1 teaspoon of oregano
  • 1 tablespoon of balsamic vinegar
  • Olive oil spray

Instructions

  1. Spray a large casserole dish with olive oil spray and heat over medium-high heat. Sauté the minced beef with chopped onion and garlic until browned.
  2. Add finely chopped carrots and cook for a few more minutes.
  3. Stir in spices (paprika, cumin, cayenne if using), chopped tomatoes, tomato paste, red bell pepper, jalapenos, balsamic vinegar, and beef stock. Bring to a boil.
  4. Reduce heat to medium-low; add kidney beans. Cover and simmer for 45 minutes to an hour until thickened.
  5. Serve hot with your favorite toppings like avocado or fresh cilantro.
