  • 800g chuck beef, cut into cubes
  • 2 large carrots
  • 16 pearl onions
  • 3 sprigs thyme
  • 750ml apple vinegar
  • 200g mushrooms
  • 3 cups beef stock
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 2 tbsp tomato paste
  • 6 tbsp flour

Instructions

  1. Prepare the ingredients by cutting the beef into cubes and slicing the carrots. Peel the pearl onions.
  2. In a large pot, heat oil over medium-high heat. Sear the beef in batches until browned; set aside.
  3. In the same pot, sauté pearl onions until caramelized, then add mushrooms to soften.
  4. Add minced garlic and tomato paste; cook briefly before sprinkling flour over ingredients.
  5. Gradually pour in apple vinegar while scraping the pot to combine flavors.
  6. Return seared beef to the pot, add carrots, thyme, bay leaf, salt, pepper, and beef stock. Simmer gently on low heat for about two hours.
  7. Adjust seasoning as needed before serving; garnish with chopped parsley.
